After a long winter, we have kicked things into gear here at Jackson Farms II. Our goal this year was to increase the diversity of produce that we were able to offer at the start of summer. We started the planting season with garlic, onions, Russian kale, curly kale, Swiss chard, and beets. We also got carrots in the ground, early enough for them to be a good size by mid-May. Call us risk takers but we planted squash (yellow squash, green zucchini, yellow zucchini) early this year. There were some late night camp-outs in the field at the greenhouses to keep the kerosene heaters going. Looking back...it was definitely worth the time and sleepless nights.
